Cooking for Two
A few words of advice, if you’re going to experiment with a recipe, don’t do it when you have an audience that you’re trying to impress. I was cooking because Racquetball Guy was in town for about 8 hours and I thought it might be good to surprise him with a home cooked meal. On the menu were sweet potatoes, macaroni and cheese from scratch, baked pork chops and corn bread. I managed to get an A grade on everything but the sweet potatoes. In my effort to stay somewhat low carb/low sugar (I know, a joke right!!), I tried out this recipe for the sweet potatoes from The Complete Caribbean Cookbook. What a disaster. I followed the simple directions perfectly, but there was nothing wonderful or tropical about the dish. I should have thrown it out before Racquetball Guy got to my place, but I placed it on the table with the other dishes. He tried to like it since he knew I had put my heart into it, but in the end, we both agreed that it was awful. So next time he’s in town (hopefully next weekend), I’m going to have to go back to my original recipe so I can redeem myself.
